What to eat in Puglia
These are only some of the popular meals of the Apulian territory. We hope you enjoy this small description. When you visit Puglia, you will certainly taste many other typical dishes. ​​​​​Orecchiette e cime di rape: This kind of handmade pasta has become popular in most parts of Italy. If someone associates Puglia with food, he will certainly think of orecchiette con le cime di rape.

Riso patate e cozze: This special meal was born in Bari, and it's made of rice, potatoes, mussels and other natural and local ingredients.
It is cooked in the oven.

Gnumridd: This dish is very popular in Altamura. It is the insides of lambs rolled and spiced, cooked over wood.
The taste of Gnumridd is undescribable.


Bruschette: The bruschette are usually eaten as an appetizer. They are slices of bread (if the bread is from Altamura it is better) whit tomatoes, salt, extra virgin olive oil and a little bit of oregano. This is the typical way to eat bruschette.
Fave e cicorie: This is a vegetarian food with only two kinds of vegetables: typical murgian beans (Fave) and chicory (Cicorie), usually served with extra virgin olive oil and toasted bread.

Pettole: A traditional extravagant meal made usually during Christmas.
They are balls made of flour, water and salt, fried in hot oil.
You can put sugar on them and make them taste like donuts.
